Ursula - Sea Witch Queen

 (Blackberry Jalapeño Margarita with Sea Salt Foam)


Happy set 4 launch day everyone! To commemorate the face card of the set, we have prepared for you a drink inspired by Ursula herself.

Here, the use of blackberries in the margarita reflect both the card's Amethyst identity and the dark depths depicted in the art. As the set's big antagonist, a dash of jalapeño provides a kick to the drink. Finally, in lieu of a traditional salt rim, we switched things up by topping the drink with a sea salt foam to match the ocean theme. Plus, who doesn't love sipping on a margarita when they're by the ocean?

Recipe
1.5 oz tequila blanco
1 oz Cointreau or Triple Sec
1.5 oz blackberry jalapeño syrup (see below)
0.75 oz fresh lime juice
Sea salt foam (see below)
Maldon salt
Sliced jalapeño
Fresh blackberries
Lime zest 

Fill a shaker with ice. Add tequila, Cointreau, syrup, and lime juice and shake to combine. Muddle 4-5 blackberries in a glass; cover with ice and 1-2 sliced jalapeños. Pour mixed drink into glass. 

Prepare sea salt foam (see below) and spoon onto drink immediately. Top with a generous sprinkle of Maldon salt and a touch of lime zest.

Blackberry Jalapeño Syrup
3/4 cups water
3/4 cups granulated sugar
1 pint fresh blackberries
2 slices jalapeño

Bring water and sugar to boil in a small saucepan. Add and muddle blackberries. Add jalapeño slices and boil for 5 minutes. Remove from heat and take out jalapeño. Let mixture sit for 10 minutes, then strain syrup. Store in refrigerator for up to one week. 


Sea Salt Foam
2 cups cold water
1 egg white
1 tbsp sea salt

Combine all ingredients in a large bowl and whisk until foam develops. Makes enough for 2-3 drinks.  

Note: Product will become stiff with time and lose its foam-like quality. Do not prepare until drink is about to be served. 

Note: Consuming raw eggs may increase your risk for foodborne illnesses. Aquafava can be used in place of egg whites as a vegan alternative.
